Tim Phillips has been making wine since 2005 in South Africa and elsewhere. This is a local project – he also makes world class ciders, beer and sparkling wines. Production is tiny and the wine is only released if it is considered good enough.

The once abandoned 19th century kitchen garden in Hampshire provides a fantastic environment for Chardonnay, Riesling and Sauvignon Blanc vines. The combination of gravel soils, Lymington’s maritime climate and the thermal properties of the walls offer a unique vine-growing opportunity from which Tim crafts both still and sparkling wines. Restoration of the ancient apple orchard is ongoing and with it cider production, along with a small amount of beer from wild hops that he discovered growing behind the winery. Convinced that the true value of wine lies in its ability to reflect time and place, he manages the vineyard organically and follows natural winemaking practices in the cellar. This post-modern approach requires a higher level of understanding and a less interventionist approach than is often seen today but we believe it results in a more authentic wine.
